Tue-sloppy joes
Wed-chicken pastrami roll ups with Bow tie noodles and cabbage
Thurs- feta cheese salad, falafel balls and pita

taco salad: I used 1.5 lbs dark ground turkey. Browned it then added spice mix (search for the homemade taco seasoning thread here) and some water to make it saucy. Served it over a salad of romaine, red onion, avocado, tomato and Kirby seasoned lightly with oo, garlic, s&p.
rice was made in the oven with 1 cup uncle bens white rice, 2 cups boiling water and some salt. Covered and baked at 350 for 30 min.
Schwarma chicken: 1.5 lbs dark chicken cutlets. Marinate 2 hours or overnight in a ziploc bag with 4 tbsp oo, 4 garlic cloves crushed, 1 tbsp sugar, 1 tsp curry power, 1/2 cumin, 1/2 tsp coriander. Arrange chicken on cookie sheet. Bake uncovered At 425 for 25 min. Slice thin and stuff into pita. Top with Israeli salad and homemade tehina.
Eggplant parm stacks: slice eggplant into 1/3" rounds. Dust with flour, dip in egg, then mix of breadcrumbs, almonds and salt. Arrange on greased cookie sheet. Spray with oo. Bake at 450 for 15-20 min each side. Spread marinara on eggplant rounds. Top with shredded pizza cheese. Arrange another eggplant round on top. Repeat with sauce and cheese. Bake at 400 for 10-12 minutes or until cheese is bubbly and just starting to brown.
Ill pull up the blintz loaf soon. It's basically whipped cottage cheese, flour, egg, sugar, vanilla and baked in a loaf pan. Serve slices.
Roast beef I have in the freezer sliced along with a container of its gravy. Will rewarm together. Orzo I use raw with some chopped veggies and seasonings, add boiling water and bake.
Salad will have creamy dressing and topped with fresh hard egg quarters. Baguette warmed in 450 oven for 6 minutes until crusty.

I'd love that blintz loaf recipe when you have a chance to post it!

Our menu for the week is:
Sunday- leftovers (grilled chicken & vegetables, spaghetti squash, rice)
Monday- sushi, sesame teriyaki salmon, carrot muffins
Tuesday- sweet potato soup, cocktail meatballs, rice pilaf, Asian coleslaw
Wednesday- glazed chicken, veggie pot pie, rice
Thursday- undecided...

1 stick butter, melted
16 oz whipped cottage cheese
1 tsp vanilla extract
1/2 cup flour
1/4-1/3 cup sugar
3 eggs, lightly beaten

Combine melted butter with whipped cottage cheese and vanilla. Mix until smooth.
Slowly add flour, then sugar, then eggs one at a time, mixing well after each.
Pour into 2 lb loaf pan. Bake in oven preheated to 350 for 40 min. Let cool for 8 min. Cut into about 8 even slices. Serve each slice topped with berries.

Sunday - pasta with tomato sauce, cottage cheese, broccoli (this dinner was at Ds's request)
Monday - red lentil soup, corn-scallion-cheddar fritatta, roasted root vegetables
Tuesday -lentils and rice, cucumber raiita, lettuce salad
Wednesday - tomato eggplant stew over polenta
Thursday - tuna patties, green beans, mushroom rice

How did you make the meatballs in pita, and what is an empanada?

The meatballs came from this thread. Ra Mom posted them recently.

The empanadas were from the same cookbook by Jamie Geller. I will try and type it up later.
