Sounds like fun!

Sunday: Shabbos leftovers, Israeli salad
Today: Chicken marsala, brown rice (ra_mom's recipe!), roasted asparagus
Tuesday: Chicken and potatoes (also ra_mom's recipe!)
Wednesday: Steaks (lekovod rosh chodesh!), a potato dish (undecided exactly what), and roasted broccoli
Thursday: Salmon (Garlic and Herb salmon from McCormick's recipes), spaghetti squash (or maybe actual noodles) and tomato sauce, and something else, undecided as of yet. Maybe roasted veggies.

Easy dinner menu for us as this week seems like it will be quite hectic!
Sunday: leftovers
Monday: Asian burgers, veggies and dip
Tuesday: baked ziti, garlic bread, tossed salad
Wednesday: salmon, veggie sushi
Thursday: takeout

I've got a very important guest coming soon...my mother! Whom I haven't seen in two years. I've got to plan a nice menu for that whole time. And it has to be easy! And healthy!

Tues: turkey and broccoli stew
Wed: Mom arrives - Mexican chicken salad
Thurs: Mom's b'day - egg rolls, chinese chicken, stir fry veggies, b'day cake
Shabbat eve: challah, plum chicken, carrots, JM kugel, chocolate fruit
Shabbat lunch: challah, roast beef, butternut squash, date bars
3rd Meal: matza, cream cheese, jelly, fruit salad
Sun: Chicken shnitzles, mushroom kugel
Mon: Mom's Italian meat sauce, zucchini
Tues: BBQ Chicken Wings, yams, watermelon, marshmellows
Wed: Salmon, carrots
Thurs: Meatballs, yam fries
Shabbat Eve: Challah, chicken, rice, carrots, chocolate
Shabbat Lunch: Challah, roast beef, squash, frozen cherries
3rd Meal: matza, cream cheese, jelly, fruit salad
Sun: Chicken shnitzle, stir fry veggies
Mon: Chicken burritos

Do you have a good recipe for brown rice? I'm always on the lookout for new ways to cook it, as DH doesn't like plain, boring brown rice.

Plain brown rice actually has more flavor than plain white rice. However, if you don't like it plain, you can usually use it the same way you use white rice, just adjust cooking times.

In my opinion, brown rice is particularly tasty with sauteed mushrooms.

Another option is a popular recipe from Susie Fishbein for baked medium or short grain brown rice. You bake the rice in the oven and then add edamame, shredded carrots, soy sauce and sesame oil. I don't have the recipe handy, but I have successfully googled it in the past.

Delicious recipe for brown rice:

Saute onions and mushrooms.
In a pan, place 2 cups rice with 5 cups water.
1/4 cup olive oil
1/4 cup oil
3 tbsp soy sauce
salt and pepper to taste.
Add the onions and mushrooms.
Cover and bake in the oven for 1 hour at 350.

It's moist, tasty and delicious. I won't eat rice any other way.

You can do the same thing in a pot, I think it takes less time. And this recipe tastes good with white rice or basmati rice.
