Sure. See page 22 where OldYoung posted this recipe. It's delicious! When I make it as a main dish, I use a full bag of shredded cheese.

ra_mom, do you think this would taste good with only mayo (use 3/4 c mayo and no sour cream)?

Prob. It should still be a great dip for veggie sticks.

and here's the other, from the Binah's Shavuos recipe supplement for this year. (I obviously leave the cheese out when serving with a fleishig meal!)

Dressing:
medium ripe avocado, peeled and cubed
1/2 c mayonnaise
1/3 c oil
1/3 c water
3 T lemon juice (I use a drop less so that it's not so tart)
2 garlic cloves, peeled (I use crushed cubes)
1/2 t salt
1/4 t hot pepper sauce

bunch romaine lettuce torn
1 12-oz box of grape tomatoes, sliced
1 c shredded mozarella and cheddar cheese
1 2 1/4 oz can sliced black olives, drained
2 scallions, chopped
small bag chips of your choice (I use terra sticks)

Blend dressing ingredients until smooth. (I whisk with a fork but you should probably use a blender!) Layer salad ingredients, pour dressing over, sprinkle with chips.

We had this tonight for supper, and it was delicious (especially with the terra stix.)
Thank you so much OldYoung! Tongue Out

Would this work without the olives? No offense but I hate olives..... ra_mom, this is enough for a main dish???

We make it without the olives.
I serve huge bowls of this (think 2-3 people for this recipe - with lots of leftover dressing), along with warm crusty garlic baguettes, and it's a nice light filling dinner.
Make sure to get some terra sticks if you can.

Thanks, what about the spinach tomato pizza??

Spinach Tomato Pizza
• 2 Tbsp olive oil
• ½ large Spanish onion, chopped (1 cup)
• 1½ cloves garlic, minced
• 1 lb. frozen spinach, thawed and squeezed dry
• ½ tsp oregano
• ½ tsp dried basil
• 1 tsp Kosher salt
• 8 oz. (2 cups) shredded cheese + 1 cup more for garnish
• pizza dough
• 2 fresh tomatoes, evenly sliced

Preheat oven at 400 degrees, or toaster oven to 350 degrees.
In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until tender and translucent, about 5 minutes.
Add spinach and sauté until excess moisture evaporates.
Add oregano, basil and cheese. Mix well until melted. Remove from heat; set aside.
Roll out the pizza dough into desired forms.
Using a spatula or back of a spoon, spread the spinach cheese mixture in an even layer over the pizza dough.
Arrange the tomatoes over this layer, sprinkle with mozzarella cheese. Bake for 25 to 30 minutes.

I have the zyliss peeler, for those who asked. I have only used it for zucchini (for the alfredo) and it works really nicely!

Our menu for this week-
Sun: leftovers and bbq
Mon: garlic bread, greek pasta salad, seasoned broiled flounder
Tues: teriyaki salmon and vegetable sesame noodles
Wed: falafel, pitas, Israeli salad, french fries
Thurs: pizza (probably takeout...)
