I used a dash of BBQ sauce instead of the Worcestershire sauce, and I *think* I used shiitake mushrooms (3 instead of 4), but they weren't labeled, and I might have used Portabellas accidentally.
I cut down on the meat, and I shook the meat with flour, etc in the liner bag itself.

It's kind of half/half! Wink (Based off of Farfalle with Pesto Tomatoes from Dining In)

12 oz. pasta (I use angel hair)
3 cubes crushed garlic
olive oil
pint grape tomatoes
1 1/2 c. sour cream
2-3 cubes crushed basil
1/2 t. salt
1/8 t. pepper
(1/4 c. pine nuts)
1/2 c. parmesan cheese grated.

Cook pasta and drain. Saute garlic in oil. Add tomatoes, sour cream, basil, salt pepper (and pine nuts). Add sauce to cooked pasta. Stir in cheese until melted. Serve immediately.

I'll be perfectly hones with you - I saw the idea in a magazine (can't remember which) and forgot to clip it. So I made up my own version!! Smile

2 medium eggplants, sliced on the vertical thinly
1 egg + 1 T. water
1 c. breadcrumbs
2 T. rosemary
1/2 T. granulated garlic
salt

Mix the breadcrumbs and spices together. Egg and bread the eggplant slices and fry until golden and crispy on both sides. Drain well on paper towels.

Prepare a cheese filling of approx:
1 c. cottage cheese
1/3 c. shredded cheese
the leftover breadcrumbs (I had a couple of tablespoons let)
the leftover egg
a little extra garlic powder

To assemble:

Place 1-2 T. cheese filling on the wider end of the eggplant and roll it up to the thin end. Place seam side down in a baking pan. Repeat with all the slices and pack tightly together. Smother in chunky tomato sauce and bake covered (I did uncovered and it got to dry) for about 30-40 min. Maybe uncover the last 10 minutes or so?

Tomato sauce:

2 really big tomatoes
1 onion
5 cloves garlic
3 T. olive oil
1/2 c. water
1/8 tsp. hot paprika
1/4 tsp. black pepper
1 T. chicken soup mix
salt to taste
bay leaf

Chop up the onion and garlic real small and saute in oil till golden. Add the tomato, finely diced, and continue to cook for another 10 minutes. Add everything else and let it simmer for about a 1/2 hr. until sauce is reduced and thickened. Remove bay leaf.

Sun: Chicken fajitas, rice
Mon: Braised short ribs, noodles (there's lots of vegetables in the meat)
Tues: Butternut squash soup, rolls, frittata
Wed: Spicy chicken thighs, roasted potatoes, green beans with garlic
Thurs: Paneer makhani, rice, another vegetable dish (I have to see what looks good--I'd like an eggplant dish). Either naan or parathas depending on how I feel.

Ooopps!!! I forgot to add - Peel the eggplants before you slice them and then if you want, you can sprinkle a little salt on them and let them sit for about a half hour to let them sweat.

Monday: meat stuffed tacos, chopped salad
Tuesday: pesto chicken, garlic pasta, spinach patties
Wednesday: slow cooked creamy chicken and rice, steamed vegetables

Monday: shabbos leftovers and hot dogs and baked beans
Tues: bean burritos and spanish rice
Wed: meatballs and spaghetti
Thursday: wacky mac for the kids and beans and rice for me and DS

The pesto chicken will also be made in the crockpot iyH.

Sun - pulled chicken with slaw and popcorn, recipes here

Mon - noodles with broc and cheddar, will post recipe if good

Tues - burgers and all the fixin's

Wed - fish but not sure what to serve with that yet

thurs - leftovers, undoubtedly
