Here's the rainbow salad recipe from KBD (my family likes it with regular white vinegar or balsamic vinegar)

Tonight: leftover grilled chicken breast mixed with leftover zucchini/tomato side dish and leftover roast veggies, over pasta. I think that may be what they serve in restaurants, and they give it a fancy name!

I am not so good at assigning days of the week to things.

Sunday was eggplant pizzas
Monday? fish with a veggie
Tuesday? spaghetti squash and garlic bread
Wednesday? pasta with the random veggies I have in the fridge
