I want to avoid overmixing the flour but also want to avoid lumps.
I dont have a whisk or blender - only a fork,

Mix the eggs and milk first, then slowly pour it into the flour while mixing.

Don't worry about getting every single lump. Mix it until combined, and let the batter sit for a few minutes. If you see any big, obvious lumps break them apart, but don't worry about getting the batter 100% smooth or you'll risk over mixing it.

When I make a cake mix I put the dry ingredients in the bowl and make a hole in the middle then put one egg at a time and mix in the sides slowly it avoids lumps from forming

For blintzes, I carefully mix the flour with the milk, whisking well enough to eliminate lumps. I mix the eggs and sugar separately, then combine the two mixtures.

Yea using the whisk attachment but might not be necessary to take that out
