Ingredients:
6 boneless, skinless chicken breasts (about 3 lbs or 1.36 kg)- You can also use pargiot of a juicier part of the chiken
1½ cup (360 ml) chicken broth
1 onion, thinly sliced
3 cloves garlic, minced
1 cup (150 grams) Kalamata olives, pitted
½ cup (75 grams) sun-dried tomatoes, chopped
1 Tbsp (15 ml) fresh rosemary, chopped
1 Tbsp fresh thyme, chopped
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon wedges, for serving
Instructions:
Place the chicken breasts in the slow cooker. Season with salt and pepper and add the onion, garlic, olives, sun-dried tomatoes, rosemary, and thyme.
Pour the chicken broth over the ingredients, cover, and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Serve with fresh parsley and lemon wedges on the side.
The chicken pairs well with rice, quinoa, or a fresh salad.
if you dont like olives, just omit them

Duck sauce is not carb free. It’s full of sugar

Spice mixes are my best go to
Israeli spices (hawaij, ras al hanut - those two together are delicious with thyme and smoky paprika)
Cover and cook until its falling apart and you can broil for the skin to get crispy
Phlidelphia spice
