knaidel mix definitely exists.
Frum Health food stores stock it all year round. You can stock up pesach time...

Kneidel/matzah ball mix is sold in most kosher grocery stores all year round. I usually stock up after Pesach, when things go on sale.

Dr Praegers used to make gluten free fish sticks. But now when I searched it looks like it’s out of stock everywhere.
