I leave the skin on, and just use spices. Also make sure to cook it covered in a ceramic pan, and not a tinfoil one. Much better.
I like using Mrs Dash garlic spice mix & paprika.

I cut it into fairly thick chunks on the diagonal and steam them in my bamboo steamer but you could also use a pot filled with water and a colander that fits on the rim of the pot. When done I sprinkle with salt and pepper and maybe a bit of olive oil and/or some soya sauce.

Wait - please explain more.
You put the chicken on a centimeter of salt? You put salt a centimeter away in a circle?
What is this method?

Chicken in middle of pan.
A layer of coarse salt approximately one cm thick ( high?) all around the chicken- like a picture frame if you will. Altogether maybe 1-2 cups of salt. Flatten the salt so that it sits as a layer around the chicken.
The chicken does not need to touch the salt although ultimately a few granules will end up on the chicken.

And that alone keeps the white meat moist?
It sounds amazing

Coming back to this recipe and thinking of making it...
What temp do you bake it on and how long for 6 chicken bottoms?

I just made yummy chicken - combine 3/4 cup coffee (I made it with instant) (or however much you need to make some sauce) and some garlic cubes. Pour over the chicken and bake.
