Apple galette,
Apple butter brisket

Is that too much to ask? 😬

The carrot muffins are from rorie's cookbook

Apple butter brisket is also

Apple galette, I use gf flour and skip the crumbs
https://betweencarpools.com/ap.....ette/

Flanken onion soup

Silan salmon: sprinkle side of salmon with salt and freshly ground pepper, brush with a mixture of silan and coconut aminos (or soy sauce) and bake at 425 for about 40 minutes.

I usually cook pretty much everything from scratch on Yom Tov Smile I'm just not organized enough.

This year I actually did some prep in advance, we'll see if it pays off or not.

I’m still working on my menu. I’m going to do whatever I can to make things as easy on myself as possible this year because I’m just not physically able to do everything I used to do years ago.

Chicken rollups

Coat chicken cutlet in mayo first then in cornflake crumbs with garlic powder, or add whatever other spices you like.

Cook up sweet potatoes, drain and mash, add salt. (Or spices you want)

Smear mashed sweet potato over Breaded raw cutlet. Roll up. Hold together with toothpick.

Bake. Until crumbs look golden.

I like to freeze raw, roll ups lined up on a lined pan, and bake later, day it will be served, so it's crispy and fresh and not dry.

Doesn't need lot of baking time maybe half hour so shouldn't dry up. If you do bake before and need to reheat best if you spray with oil so it shouldn't be too dry.

Cauliflower kugel

I make like a broccoli kugel although original recipe was diff.

I cook up frozen Cauliflower in water and salt. Drain and mash.

I add in 3 eggs, 1/2 cup light mayo, then add in spices like salt and pepper, garlic powder and/or soup mix like chicken consomme or onion soup mix.

Combine, place into pan or pans.

Bake for 30-40 minutes on 350 or until top is golden.

Supposed to be diet recipe and tastes similar to potato kugel

You could freeze, but it might get watery so need to reheat in oven and finish baking. Best if not overbaked before freezing so you can bake it more later.

Tzimmes

Is simple zeese mayeren. Nothing fancy added.

Peel and slice carrots into round disc's.

I do thicker slices cutting with knife and cutting board and thinner slices with food processor. Combo of both.

Place carrots into a pot or pan, along with lots of oil, honey, sugar and pinch of salt. Keep stirring until cooked thru and carrots are soft.

I make big pot and then divide in small foil pans and freeze, for many meals in tishrei. I place foil pan onto hotplate for reheating for meals, and make sure to stir, when on hotplate so that bottom doesn't burn.

So I either use a large stock pot let cook and don't need to stir that much, this year I did in a large wok pan so it's easier to stir and they get more crispy.
