I've been experimenting sometimes with potato kugel making.

For a 9x12 aluminum pan, what's the typical amount of eggs and also oil for the batter?

Last time I made mine, it was too dry. Not enough oil.

I do 12 medium to large potatoes
I mix yukon gold and idaho for best results ( you don't even need to peel the Yukon Gold, taste it before you comment )
I do less than half a cup of oil
Eight eggs
Half a cup seltzer
Big on high, approximately 420 for the first hour
Then lower to 380

I happen to like mine more soft and pudding texture so I use 7-8 eggs and 1 cup of oil for 6-8 large potatoes

I do 5 or 6 eggs and 1/2 cup oil, or slightly more. I added a cup of water last time I made kugel and liked it too.

5 lb bag of Idaho potatoes (either grated or shredded)
6 eggs
Oil (I fill a 7 oz. Plastic cup to the top)
2 tsp. Salt
Few shakes black pepper

In my oven, I bake it at 425 for about 90 minutes. Your oven may take less time.

This comes out delicious every time.

How much oil did you use?
The moisture actually comes from pouring either boiling water into the raw mixture or using seltzer. This will give you a moist kugel.
Also, Yukon gold potatoes become soft and moist when used in kugel. If you only use Yukon gold potatoes the kugel might be too moist so I do what the above poster said- mix Idaho and Yukon gold.

I do a similar recipe but it doesn't fit in a regular 9x13. I use a deep 9x13.

And spices, I use onion powder and black pepper
I bake it on 500 for about an hour depending on oven

Our kugel is my friends recipe- so I can’t take credit.
In a 9’’’13 heat up a 1/2 c oil in a 400 degree oven
Then using the s blade chop 1 white onion, 5 eggs, 1 tbsp table salt, 1/8 tsp black pepper. Pour this in a bowl. Peel 1 bag Yukon gold potatoes. Put on the kugel blade and put the potatoes in. After add it to the egg mixture. Take out the pan out of the oven. Pour the oil in the potatoe mixture. Mix it very well. Pour it all back in the hot kugel pan. Smooth it out. Place bake in the oven and bake at 400 for 1 hour and forty minutes. Enjoy.
We love it and never have leftovers.
Have a lichtige Shobbos.
