Anyone make burritos for dinner? With flour tortillas, beans and cheese? What else do you use as toppings? My kids put it in as a request for dinner for tomorrow night.

You can see the sweet potato burrito recipe I posted earlier on this thread.

How far back do you have to go to find it? I have baby on my lap(excuse)...I can't find it.

on pg 7 - towards the middle of the page...

I also made bean burrittos for dinner I made refried beans by taking a lg can of pinto beans and putting them in the food proccessor blend till smooth mix with one onion that I had sauteed salt pepper garlic and some cumin. I put in flour tortillas the bean mixture, spanish rice (from a box) and mozzerella cheese. I then roll it up put it in a pan a bunch of them so they are touching and bake on 350 till the cheese is melted and all ingredients are heated through.

I like the idea of the spanish rice. I will serve the burritos with the rice next time.

I found a really great article in a magazine for making dinners for the week. I made a few adjustments, but the basic plan was still there. I did it a bit out of order to fit our schedule a little better, plus added a few things and obviously took out what wasn't kosher! I am also doubling things.

Monday spinach and cheese pie with carrots and a salad
Tuesday: pasta with stir fried veggies plus leftover spianch pie from Monday
Wednesday: salmon, mixed veggies and a salad (plus some of the leftover pasta)
Thursay: beef with stir-fried veggies and salad

The article said for Friday to make a Chicken & Rice Soup, so that will work out perfectly for Shabbos, plus all the other things I am making

Can I please have your recipe for your lemony dill carrot salad, honey garlic turkey balls, and Moroccan burgers? THANKS IN ADVANCE!

Lemony Dill Carrot Salad
• 2-3 cups grated carrots
• 1-1/2 Tbsp lemon juice
• 1-1/2 Tbsp extra-virgin olive oil
• 1 small clove garlic, minced
• salt to taste (I use about 1 tsp coarse salt- use less if using table salt)
• 1/8 tsp coarse black pepper, optional (I usually leave this out)
• 1 Tbsp dried dill
• 1/2 bunch (3 stalks) scallions, sliced

Whisk lemon juice, oil, garlic, salt and pepper in a medium bowl. Add carrots, dill and scallions; toss to coat. Chill until serving time.

Honey Garlic Meatballs
thanks greeneyes!
http://gotnomilk.wordpress.com.....alls/

Note: you can use more honey instead of the molasses

Moraccon Burgers
• 1¼ lbs. extra lean chopped meat
• ¼ tsp cumin
• ¼ tsp coriander
• ½ tsp curry powder
• ½ tsp salt
• 2 cloves crushed garlic

In a large mixing bowl, mix all ingredients until very well combined.
Form into 4 large balls; then flatten them down with the palm of your hand. (Should be very large and very flat - they shrink.)
Grill.
Or bake on a cookie sheet sized pan at 425 for about 20-25 minutes.

Here's the recipe.
I used natural apricot preserves, so there is no corn syrup in my duck sauce.

Note about this recipe: I had to reduce it quite a bit. Next time I think I might try to make it without the water, or just use a bit.

Sunday - (Shabbos Leftovers) Chicken Soup, Deli Roll, Potato Kugel, Yerushalmi Kugel, Sweet Potato Chicken-Really Good!!
(I line the pans with thinly sliced rounds of sweet potato. Not TOO thin that it will fall apart!... But not too thick either that it won't be soft enough. The chicken is then placed on top of the sweet potato rounds and the dressing is then placed over that.)

Monday - Homemade Franks and Blanks, Homemade French Fries, Broccoli

Tuesday - Spaghetti with Tiny Meatballs, Corn on the Cob

Wednesday - Sesame Chicken, (Chicken Cutlets for my kids who don't eat the sauce that makes it sesame chicken,) Asparagus, Rice Pilaf with Sauteed Onions, Mushrooms, and Celery

Thursday - Pizza
