Sunday - (Shabbos Leftovers) Chicken Soup, Deli Roll, Potato Kugel, Yerushalmi Kugel, Sweet Potato Chicken-Really Good!!
(I line the pans with thinly sliced rounds of sweet potato. Not TOO thin that it will fall apart!... But not too thick either that it won't be soft enough. The chicken is then placed on top of the sweet potato rounds and the dressing is then placed over that.)

Monday - Homemade Franks and Blanks, Homemade French Fries, Broccoli

Tuesday - Spaghetti with Tiny Meatballs, Corn on the Cob

Wednesday - Sesame Chicken, (Chicken Cutlets for my kids who don't eat the sauce that makes it sesame chicken,) Asparagus, Rice Pilaf with Sauteed Onions, Mushrooms, and Celery

Thursday - Pizza

what is your recipe for Homemade Franks and Blankets? Sounds good! What do you also do with your homemade fries?

How do you make honey garlic meatballs? That sounds really great.
Also, how would one go about making home made duck sauce?

Thanks. I need to find a new apricot jelly to buy. Until then...

The one I have is made from dried apricots and honey, and it's just blended together. You can make it yourself. (And this recipe only calls for a tablespoon of it, so I would just add 2 dried apricots to the duck sauce recipe and simmer along with the rest, and maybe a drizzle of honey if needed.)

Here's my simple dinner menu for this week. I'm a full-time working mother, and I don't have time to cook fancy meals like the rest of you. I only cook simple and quick meals. My kids like only kid-friendly meals, and my husband likes real cooked food so many times, I'm forced to make 2 different suppers.

Sunday - Shabbos leftovers.
Monday - Fishsticks and mashed potatoes for the kids, split pea soup, tuna quinche, and salad for us
Tuesday - Egg salad and tomatoes in wraps for the kids, vegetable soup, baked fish, and white rice for us
Wednesday - Chicken and rice in crockpot and frozen vegetables cooked in microwave for all of us
Thursday - Macaroni for all of us (as that's my only time to cook for Shabbos)

Very simple....

Franks 'n Blanks

Ingredients:
Mini Cocktail Franks (if you can't get, then hotdogs cut into 3 or 4 will do.)
Puff Pastry Dough Squares (Or Puff Pastry Dough rolled out as thin as possible)

Directions:
Preheat the oven to 375.
Cut the dough into thin strips of approximately 1/2"x1.5" dimensions.
Roll a strip of dough around the middle of a frank and place on an ungreased cookie sheet.
Bake for about 25 minutes or until golden.

Homemade French Fries

Ingredients:
Potatoes (Peeled or Unpeeled and Scrubbed)
Oil

Directions:
Slice potatoes into thin strips. Not too thin.
Heat up a generous amount of oil in a frying pan over medium to high heat. Not too high.
Drop the potatoes into the oil and fry until golden unless you like it well done.
Remove from pan with a slotted spatula and place on a plate lined with paper towel to drain excess oil.
If you're adding salt, do it after frying.
