Thanks ra-mom for the garlic pasta idea.
I marinated little strips of chicken cutlet in jalapeno dip & grilled it. Then I added it to the pasta for an entree. (I used whole grain brown rice fettuchini)
We are also having:
butternut squash soup w/ terra sticks. chicken cutlet breaded in crumbs, dried fried onions & fajita seasoning. coleslaw

Yum! Do you make the terra sticks yourself? How?
(Btw, I use 4 cloves garlic for 1/2 a package pasta. But you can use less.)

Exactly what I did, although we have leftovers (tomorrows lunch I guess). I ended up using the parsley from the freezer, cuz it usually tastes better.
The terra sticks are from the store It makes the soup look pretty & taste crunchy. ( I don't like totally smooth soup.)

basically I take puff pastry and chicken cutlets.. I lay the chicken cutlets out on one side of the puff ( in like 2 layers thick maybe depending on how thick the cutlets are.... then I fold over the top make sure everything is sealed in... egg wash on top and bake in oven mayb for 45 min to an hour at 350 depending how well done you like it.... then slice into peices
if you have more time on your hands the other way of doing it is cutting the puffs into squares and cut the cutlets into smaller peices and then fold but I find the first way simpler
the mushroom sauce I saute an onion and a can of mushrooms salt pepper and garlic powder.... then I add a tablespoon or two of flour....mix it in.... then I add either chicken broth or water depnding what I have obviosuly broth is better......and let it bubble and get thick... and then pour over each slic
enjoy!

What makes your zucchini soup creamed? Do you use soy milk or a Parve creamer?
Also, what's your recipe for creamed broccoli?

No, I cook a potato along with the zucchini and that gives the soup a creamy taste when I blend it.
For the broccoli, I saute some crushed garlic in oil, more than I usually would use. Then I added some flour to the oil and made a light roux, added the broccoli and some water and cooked till tender.
