I have one chicken bottom and I need to make something with it for dinner tonight. Any good ideas that I can do with just one now?
Thanks!

I don't know how many ppl you need to serve, but if you want to stretch one bottom, you can cook it and then shred the chicken and add: eggs, breadcrumbs, chopped onions and spices and make chicken patties. good luck

pour duck sauce over it and bake.

OR
put it skin side down in a pan and add a little salt, pepper, paprika with a generous amount of garlic and onion powder. bake covered on 450 for 1 1/2 hours.

Thanks. Actually, it's only for my husband, so anything would work.

generally I would bake it 350 for 1 1/2 hours and then uncover for another 1/2 hour.

A bit more work and fattening but very tasty is Garlic Chicken.

Make a mixture of oil, tons of fresh garlic minced (or from the jar) and a ton of dried oregeno. Put a small amount of mixture on chicken, wipe a bit off into pan. Put chicken into bag with some flour and shake to coat. Take the mixture from bowl and pan and pour back over chicken. Cover and bake one and half hours, uncover and bake another half hour.

sometimes when I'm doing only for my husband - I grill the chicken with some vegetables (zuchini, eggplant, onions, red peppers, portabella mushroom) on the george foreman - I line it with a parchment paper so there is no clean up! Very Happy

For seasoning- plain salt & garlic powder or montreal steak seasoning is delicous...

Sounds yum! Don't have fresh minced garlic though. Would it work with dried?

I think dry minced would work better than powder.

No problem. Let me know how it comes out. I usually don't make it for a regular supper because it is a bit fattening but it's delicious.
