Vacation ideas needed

I wanna go away with my husband (no kids) in January for a few days (maybe a shabbos as well)
looking for ideas-
What was your favorite vacation ever? What did you do? where did you stay? and where did you eat?
Some ideas we had were-
Turks and Caicos
Bahamas
Panama
Mexico
san Diego
I prefer something with at least one kosher spot. I have a relative that was by the Virgin Islands last week and it sounds really great. But for our first time 'major trip' (weve been to Miami, Israel, Vegas) I don't want to shlep food.
Please if you have a minute to write out what you did, not just the place because that I kinda know ykwim.

Turks and Caicos was my favorite trip with just me and DH. The scenery and serenity there is out of this world! There's no kosher restaurants there, but the Chabad may offer catering/take-out that could work for you. If you want kosher food, Panama is a great option with tons of restaurants but still lots of fun activities.

T&C revolves around the water, so we did lots of boating, jet-ski, swimming on deserted beaches, snorkeling, etc. Panama is much more diverse - the Canal, Monkey Island, cool caves to explore, waterfalls, San Blas Islands, Embera, and much more.
