I want to make schnitzel for Shabbos, but with some sort of variation: either a different type of breadcrumb or a different type of sauce/binding.

Ideas?

Cornflake crumbs work too. I do that when I have leftover cereal to use up. It’s best to eat fresh (for shabbos I would have for dinner). Not as great re-warmed up the next day.

I’ve also mixed leftover cornflake crumbs, with panko crumbs & regular bread crumbs all together. That was tasty too.

Instead of egg ive dobe mayo with honey and garlic or in place of garlic I put other spices. Dipped into bread crumbs.

All kinds of nuts are used. Pecans, almonds, walnuts, macadamias. Using honey mistard to get the nuts to stick is pretty typical. Often there is a mixture with panko.

If you google nut crusted chicken breasts there are loads of variations.

This is a honey mustard version with pecans.

My kids love this one.. add barbeque sauce to egg mixture and bread with Japanese style panko crumbs. great flavor!

I like using crushed crisps (potato chips) or pretzels for interesting crumbs. For a more flavourful binding I’ve used honey and ketchup, mayo and ketchup, or mayo with honey and spices - all worked very well.
