I want to eat turkey balls (like meat balls) in a vegetable soup that I made. But I want a lighter flavor. I don't want to cook them in the soup, nor do I want to make in a pan because then the outside is all hard.

Can I make meatballs via boiling them?

Like think of matzo balls, or gefilte fish...

How would I go about doing that?

I boil chicken meatballs. You'll need to use either salted water or better yet, water with small amount of parve soup powder. Just using plain water to boil would dilute the flavour and the resultant meatballs tend to be somewhat blah. I usually don't keep the liquid (too greasy, or gets cloudy), but serve the meatballs as is (usually with dipping sauces--sweet chili from the bottle or soy sauce) or serve with chicken soup. Flattening them slightly before you drop into the pot reduces the cooking time slightly.

you can definately boil turkey meatballs.
Like the other poster said if you do it in plain water they will come
out rather bland but then again you can make a sauce on the side.

to make them stick you can add an egg and some matzah meal.
