I love reading everyone's menus each week!

Here's what I'm making for Friday night:

homemade chummus

zuchinni soup

breaded honey mustard chicken cutlets
crustless pumpkin pie
oven roasted vegetables

low fat carrot chocolate chip cake

greeneyes, your recipes always sound sooo good. I like to make healthy food too. when you have a chance could I have your chicken, pumpie pie, and carrot cake recipe? I know it is a lot!

No time to post menu, but --

Last week I changed Clarissa's 2 layer brownies by substituting 3/4 c. peanut butter for the coffee, and adding a few Tbsp. water. They were yummy! You could put peanuts between layers as well.

This week my son came home and requested them with mint. I added 2 caps of peppermint flavoring and a few drops of green food color. I put the chocolate layer on top. Added a few Tbsp. water to @ -- more to choc layer. Also very good.

I use 1 c. cocoa instead of the chocolate. Chocolate chips are precious here, so I only use them on special occasions.

Sounds like a delicious recipie Imaleah. Actually it must be next to impossible to get what you need where you are...wow...

I decided at the last minute to change shabbos plans and make a few homemade things and not only freezer, mostly because dh and I will be alone, all the kids are away for shabbos.

So I made two cornish hens which are big enough for the two of us for a meal apiece, rice, spaghetti squash as a veg and defrosted a sweet potato kugel and have a fresh lukshen kugel which was part of the batch that I froze for yuntif this week. I also defrosted a lentil and veg soup and a buckwheat cake (no gluten, better for the stomach for both of us if the kids aren't home) with cocoa frosting (sugar, cocoa, water, no fat). To this I will add salads of humus, techina and green salads. No time or strength to potchka with quinoa, edamame or any of the other things that I usually make, that can all wait until RH.

So I planned on having a quiet no frills friday night dinner, when I got a call late last night from someone making a bris this shabbos in the neighborhood, asking me to host 2 of his yeshiva boys and also can I have them for dinner friday night.
So there went my easy dinner....

So now its...

Chicken soup w noodles

Salad w avacado and cherry tomatos
some kind of chicken
deli roll
potato kugel
yerushalmi kugel
and roasted cauliflower

melon for dessert (they are going to the shalom zachor, so I figure I dont need cake)

baked gefilte fish (olive oil, salt, pepper baked till fluffy)
fresh green salad with vegetables
spicy dill dip & chummus (bought)

it's habit from other posters here...to post challah and grape juice. I assumed it was a given myself...but when I saw it repeatedly posted I thought maybe I should make sure to write it (lest someone think we weren't having Wink )

I forgot to add: Kugel yerushalmi in the freezer. I think my kids want that more than they want rice/bulgur leftovers.

Not so many leftovers so I will really have to cook some things.

Challa ( no leftovers from RH)
fish
salads, whatever will be quick and easy
Soup and knaidlach (in freezer!)
roast
potato kugel
green beans

Apple cake
fresh fruit

I dont think anyone here really wants to look at food any time soon.

Homemade challah from the freezer

Gefilte fish and soup from my mother (I often make nicer, but too tired)

tomato dip and chrayonaise homemade from r'h

kneidlech from freezer

kugel

farfel

chulent and kishka

Weird mishmash dinner:

Leftover caramelized onion-mushroom soup with goat cheese croutons
Leftover pancakes and maple-apple topping (I froze the extra pancakes)
Leftover smoked trout with horseradish-dill-cream sauce and apples
Leftover potatoes au gratin
Broccoli rabe with garlic
Roasted carrots with citrus glaze
Not sure about dessert yet. Maybe chocolate almond mousse. Maybe not. We're still stuffed.

Soup with knaidlach (from the freezer, just add fresh veggies)
left over shoulder roast
left over orzo
left over green beans and tzimmes
left over sweet noodle kugel
Potato kugel (from the freezer - and only because my husband insists on potato kugel on shabbos)
left over ice cream brownies.

Yay!!! I think all I have to do for shabbos is peel soup veggies and put up a cholent!
