I have no idea what to make this week and we might be having company....anyone have any ideas for a vegetarian meal? no fish and no meat...

Do you have tuna? Tuna a la king over noodles is delicious! Or if you don't eat meat (not just that you don't have it in the house,) what about tofu a la king, or tofu cooked in a sweet and sour sauce (catsup, brown sugar, a little lemon juice, a little garlic, chunks of pepper, onion, and pineapple, and raisins if your family eats them. Or in that famous big, old Jewish cookbook, there's a recipe for nut loaf, which is delicious, and people can't believe it isn't meat loaf. I'm sorry -- I really don't think I can post them b4 Shabbos, but if you remind me next week....

It would help if you give us some idea of what you feel comfortable making. There are tons of options out there. Some ideas are: tofu, bean and vegetable stew or chili, stufed veggies, nut loaves/burgers, cassaroles/pareve quiches. Saying you want to make something vegetarian is like saying you want to make something fleishig, and has almost an unlimited amount of possibilities. If you tell us what you are looking for we can fill the gap.

Hrmmm, time to think about shabbos again. I'm working friday, so it really all has to be done today...


Kedem grape juice (a treat here in israel)
Home made challah, I guess.

Eggplant in some kind of salad.
Cole slaw maybe?
israeli salad
Salmon fillet- I need an idea for how to make it.

Chicken soup with matza balls

Chicken, potatoes, and tomatoes cooked in wine

Oh well -- just went shopping, and have to change the menu a little.

Fri nite:
Homemade challah
Smoked mackerel (at least I'm making gef. fish for yomtov -- Totally from scratch -- like from cleaning the fish!
Beet salad, pickle salad, and eggplant caviar from jars
Babaganoush
Black olives
Pilaf
Atlantic Av. string beans (with tom. paste, garlic, fried onions, little lemon juice)
Homemade ice cream - choc, vanilla, coffee
Either meringues or jelly roll

Shabbos day:
Homemade challah
Smoked mackerel
Beet salad, pickle salad, and eggplant caviar from jars
Black olives
Cholent with homemead kishka -- ran out of kasha flakes, so will be using up bran cereal -- it tastes just as good.
Eier mit tzibel
Lokshen kugel with pineapple
Bologna (actually it's called kids' sausage, but it's kind of like bologna)
Homemade ice cream - choc, vanilla, coffee
Clarissa's 2 layer brownies, using peanut butter instead of coffee

Last week I made the fake potato salad, using cauliflower, and everyone loved it -- even the kids. Thank you whoever posted the idea.

first of all my company is vegetarian, we're not. Second- I guess its anything that does not include fish or meat. We don't like tofu so that's out of the question. Maybe I should just make a dairy meal. I guess I just answered my own question...unless anyone else has any suggestions. any vegetarians out there?

NativeMom, when I have vegetarian guests I make extra salads, and good side dishes like butternut squash, vegetable soup, a kugel, and an assortment of things to eat. it works out very well. this way we have our regular fish/meat and they have plenty of good, filling things to choose from.

I take chicken cutlets and flatten them. I cook and drain frozen chopped spinach, drain really well. Then I mix the spinach with egg, sauteed onions, spices to taste and some matza meal. (amounts all depends on how much you are making.) I put a T of spinach mixture at end of flattened cutlet and roll up. Then I gently dip the rolled cutlet in a Chinese sauce, ie: a Chinese marinade. then I roll in seasoned bread crumbs.
Place on a greased baking sheet. I bake it for about 30 mins. Cut into one of them to make sure its cooked thru.

I thought about trying this with a rice/spinach filling, but havent had a chance to try it yet. It would also be good with sauteed mushrooms in the spinach mixture,I would imagine.

Mikees Chinese marinade. You could use any sweet and sour sauce or teriyaki sauce that you like. Thats what I have in the house, so thats what I will use.

I have a recipe like this with a mushroom stuffing. However, you don't bake the cutlets. You lay each one on a piece of plastic wrap, then fill. Tighten the plastic around the cutlet to form a ball and twist the excess plastic so the cutlet is totally encased and the plastic won't open. Drop into a pot of boiling water and cook. It's just minutes. When cooked, you take it out of the boiling water and open the plastic and you have a beautiful filled chicken "ball". I have not made this in years because I got bothered with the boiled plastic next to the food. What do you think?

boiling in plastic seems wrong to me. But who knows?
