Rochel Leah your menu sounds like mine. I also try to do soup once a week: vegetarian chili, minestrone, veg or veg/beef, lentils. I make some kind of bread to go with it, whole wheat or corn bread.

LOL
whatever I make, I try to make at least double and put other half in freezer. this way many nights come right out and are no big deal.
like..... shnitzel, chicken, meatloaf, meatballs, meat lasagna etc.
then I'll also make falafel, turkey burgers, pizza, zitti, cheese lasagna........
(hope this helps..... can't think of other things off the bat now.)

Sundays – red meat; I always cook. I usually make a big soup and salad, too, which we have for lunches during the week.
Mondays – milchigs
Tuesdays – DH makes an easy dinner since I do the grocery shopping straight from work. Burgers, hotdogs, fries from the freezer, canned corn – something like that.
Wed – leftovers, if any, otherwise I make Chinese
Thurs – make your own pasta night or sandwiches – tuna, eggsalad, grilled cheese, etc

What about the other meal during the day? I serve 2 meals- lunch and dinner, and not usually sandwiches. Any ideas for that?

I do a light pasta with vegetables and seasoning or a white sauce for lunch.
Sometimes veggie burgers topped with pizza sauce and cheese. We call it (drum roll please).... veggie burger pizza!
Also, a big salad or some kind of veggie omelet.

Just made an old and forgotten favorite for dinner tonight.
Boil up a pot of jumbo pasta shells. In another pan cook together 1-2 diced onions, 1-2 diced green and/or red peppers, mix in a large can of manwich sauce.
When shells are cooked, fill and cover with sauce in a baking pan. Top with shredded moz. or cheddar cheese, or a mixture.
Bake until cheese is really melted.

That sounds REALLY REALLY good!!!! The next time I cave and make pasta I'll have to make that. I think I'll also add some fake ground meat!
