So my dough was watery when I left it to bulk rise (not sure why) it is slightly less watery but still very sticky. can I incorporate some flour now before shaping?!

I had this problem once and tried adding extra flour and sourdough came out very thick and not fluffy.
Even if it didn't work out well this time just keep experimenting again and again till you get it right. It's so normal to go through this.
Technically you can bake it even if it's very sticky just might not be the prettiest shape.
Can it be your home is more humid? If yes then add 30 extra grams of flour to your recipe.
Could be the kind of flour you used does not absorb as much water as other flours.
Could be you didn't measure ingredients properly.
Could be your starter is more liquidy and might effect water to flour ratio.
