Ok so I have a functioning active bubbly starter! I've been feeding it by discarding down to 1-2 tbsp (I eyeball) and then adding 40 g each water and flour.
If I want to make a recipe that calls for 150 grams of starter how do I accomplish that AND have enough extra starter to put away for future?

Take some of your discard and feed it. After a few hours you can feed it again. You can grow it as big as you'd like.

Thanks, was hoping someone might have exact amounts for me! Do I have to feed it in 1:1:1 ratios or can I add even 100 g each of water and flour to 40 g of starter?

Add even amounts of flour and water when feeding. Starter amount doesn’t make a difference. (This is how I do it…)
