I change the way I spell my son's name based on who I'm talking to, but officially we use Binyomin. It only depends on how you pronounce it. Binyamin is the modern Hebrew pronunciation and Binyomin is the Ashkenazi pronunciation.

Are you asking g about the Hebrew spelling, or the pronouciation?
It is spelt בנימין.
No one speaks it בניומין.
(I just had a fight with the spell checker on my phone to let me write it that way.)
You can pronounce according to your mesorah.

Not really. Do you spell Sara with an o? Using a for the "uh" sound isn't modern Hebrew. The a and o in binyamin are pronounced the same.

Only in an American accent.
What about Ashi and Oshi?

It depends if you are looking to say it the Hebrew/ivrit way or Lashon hakodesh.
It's the same idea as Yitzchak or Yitzchok

In my experience, the charedi communities spell it with an O and other communities with an A.

I'm regular middle of the road American frum, closer to yeshivishe than to modern-orthodox.
I wouldn't pronounce Binyamin and Binyomin differently, I'd say them exactly the same, with standard Ashkenazi pronunciation. Same with Sara and sora and even surah (in my experience, the first is the most common). Same with yitzchak vs yitzchok, Yisrael vs Yisroel.
I'd just assume it's all the same and the parents just chose how they like the spelling. In other words, I don't think it really matters.
(The one difference is that I know in the Syrian community names like "David" and "Daniel" will be spelled like the anglicized version but pronounced in hebrew with their havara. Names where in the ashkenazi world we'd put a ch might be just an h (like yehezkel vs yechezkel and Yitzhak vs yitzchak).

Did you mean that some chareidim will spell it with an o and no one from other communities will?
That would be more accurate

With a British accent they sound different, so you would spell it on how the person is known as…
The same with Sara and Soro- I know a bunch of soro’s and it is sounded different to Sara.
