My husband makes the latkes (and the kugel also) and he only uses Yukon. I use Idaho for baked potatoes, but that’s about it.

I use Yukon for everything. Makes the best kugel. Please note that if your potato is green it's actually toxic & shouldn't be used. I had to throw out half a bag last week.

Since this is related to picking potatoes, and is a safety topic:
The USDA says that you just shouldn't eat the green parts, but it's fine to eat the potato once you remove them.
Occasionally, the potato will taste bitter even without green on it, and that's a sign not to eat it.
The toxicity is the stomachache-and-diarrhea type, not the fatal type.
