I'm seeing a lot of articles about sheet pan latkes. While I would love to skip the buckets of oil and time spend frying them, I do wonder if sheet pan latkes are really a good replacement--the best part of latkes is the all over crispiness and texture, and I think sheet pan latkes will lack that and just be kind of mushy. Have you made them? What do you think?

Frankly speaking how would they be different from potato kugel?
I have made individual potato kugel in muffin forms, there is no crispy edge..

I once made a recipe that called for lots of oil on the sheet pan. The sizzling and pooping in the oven made me nervous.

Tastes like potato kugel. If you want a real latke taste, there's no way around it imo.
