The only thing I can think of would be to take a fruit juice and turn it into an icee. Some fruit juices have no fiber. Watermelon has very little fiber, maybe you can blend it and turn it into an icee/popsicle.
Side note, did you ask her what she does eat? I'm just curious because seems from your list it's just Tilapia and I can't imagine she eats Tilapia for breakfast lunch and dinner. Like, what is on her list of foods she is able to eat.

Popsicles are certainly better than nothing!
Good thought.
I asked her when she came last time and basically she said just tilapia. She is extremely underweight and I suspect, mostly just eats that. To the person who said tilapia is an odd choice (if tilapia why not other super lean white fish like sole or flounder that would be cleaner?) But she insists and I don't think its my place to argue.

This is very strange - and I’m used to cooking for people on restricted diets. And I have family members on diets for mental health type stuff so I’m a believer in the connection and power of food.
I wouldn’t stress about it if she’s not telling you what she eats. Could be she’s anorexic and not going to eat anything anyways.

My husband is on a very limited diet, I say which 3 foods he does eat instead of listing the long list he can’t eat. Just ask them what they usually eat.

Looks like you're left with nuts and seeds.
Nut butters -natural (almond butter, cashew butter) served on their own.
Roasted or raw nuts (check for flavorings or oils that might not comply).
Seed crackers (made only with seeds, no grains or additives).
Serve a steaming mug of boiling water at dessert along with herbal tea assortment and cinnamon in case she can have the natural options.
But mostly, just make enough (a lot) tilapia. She must be used to subsisting off fish and nuts.

So that’s all she’s going to eat no point in trying. And it does sound like an eating disorder so even more so she won’t be eating anything else.

Did she actually say no fruits or vegetables? Because that's different from no fiber. Can she have a blended vegetable soup? Or poached fruit?
