If you can solve this one you are way smarter than I am. I just found out that we have a guest coming for tonight who can't eat:
Gluten
Fiber (so no fruit,, no veg,no grains or beans)
Rice
Nuts
Chocolate
Oil
Any animal product except tilapia (so no other fish, no chicken, no eggs.....)
I made her a piece of tilapia for main course but any ideas for dessert that doesn't contain grains, nuts, fruit, chocolate, eggs or any type of Gf flour?
And for those of you who I am sure will rush to say this, there is a chance yes, some of this may (or may not) be in her head. But I have no way of knowing and this is a girl badly in need of chizuk.

It’s possible she has mCAS
Im not so quick to dismiss these kinds of things
However with all these restrictions I would ask her what ideas she has for dessert and you’ll be happy to make it for her

Safest thing to do is to ask her for ideas- I’m on a very restricted diet and always feel bad when someone tries rly hard and makes me special food that I can’t enjoy.

Does no animal product mean no dairy? No honey?

Would be easier to find out what she usually eats so you get ideas. Kol hakavod!

What does she eat? I don't get guests like this. When I was on a restrictive diet I brought my own food or ate before/after the meal. I never expected a host to cater to my special needs.

I'm usually creative with allergic guests but this one has me stumped. No fruit, veg, legumes, grain, no animal protein except tilapia.
Tilapia is a strange choice because it's known as a dirty fish and also usually farmed. Interesting that she can tolerate that.
Does she eat soy? Then you can make miso soup with seaweed and use tofu as well.
Does she eat seeds? You can make a kind of seed cookie with honey as a binder

Is fruit juice okay since juice doesn’t contain fiber?

Ask her to bring along food for herself. Explain that you don't want to mess up.

I started with that. But she of course said "oh, don't bother for me." So as it stands, she will be sitting at a table watching uncomfortable people eating lots of yummy things.
A PSA if you are ever invited and have a limited diet. If the host asks what you can eat, pleeeeeze answer. I would rather make something special for you than have you sit there.

You can keep her food double wrapped & serve everyone in plastic.
You can also call her now & ask her what you should prepare for her.

I know it sounds a little silly, but maybe you could make ices from fruit juice?
Or if she can have tofu, as another poster suggested, and you have a blender, you can try to make a smoothie using silky tofu, fruit juice and honey?
