Can someone help me figure out when to make things

When should I make these items for Rosh Hashana? The earlier the better, just not sure how much in advance I can make them:

Meat and meat stew
Chicken
Rice
Roast potatoes
Potato kugel- I want this on Shabbos
Deli roll- freeze raw now or refrigerate cooked?
Meat Bourekas- freeze raw or refrigerate cooked?
Roasted broccoli

Also please let me know if I should freeze or refrigerate. Thank you so much.

How will you be reheating them on Yom tov?
Oven?
Stove/blech?
Electric plata?

Meat and stew can definitely be made ASAP
Same with chicken and deli roll

Sorry, I didn't check back until now.
If I made it today, id keep in fridge.
I'd I made on sunday, I probably would have frozen and then out in fridge.

Meat in sauce heats up beautifully on electric plata.
