You can just make pineapple juice ices. We made them every week growing up. just pour pineapple juice into popsicle molds and freeze with stick in it.

I cut the pineapple into cubes then freeze it. once frozen solid (4-6 hours) place into a blender with a tbsp lime juice, 1/4 cup water (add more if the blender is having a hard time) and taste the pineapple before freezing to see how much sugar it needs, usually around 1/4 cup. blend and enjoy or refreeze in a tight seal container.

Can I make these with frozen pineapple ?

Cut up one fresh pineapple into chunks and freeze on a baking sheet for at least four hours.
Let defrost slightly and then blend with one tablespoon of lime juice.
Nothing else.
It is delicious.

It's good with frozen chunks but much better and tastier with fresh pineapple that was frozen.
