Can I make bourekas (using store bought pastry dough) ahead of time, and freeze them for yomtov?
If so, how would I reheat them?
Can I do this with a mashed potato filling?

I do this all the time
However I freeze them raw and bake them fresh.( or bake erev yomtov- reheat the uncovered or they will get soggy)
I wouldn’t freeze them baked

I second freezing raw.
Perfect for popping in oven erev Yom tov. Or succos chol hamoed .
Come out hot and fresh in just a few minutes

Yes you can do this with potato and cheese filling. Freeze them raw, not baked. They come out so fresh and it’s so easy
