This kugel literally just came out of my oven now. It's delicious!

I left out the powder and added salt.

Next time I would first mix the eggs and mayo together.

This broccoli kugel is the best I've ever tasted and is inherently dairy free.

PREP TIME
10 minutes
COOK TIME
30 minutes
TOTAL TIME
40 minutes
INGREDIENTS
3 cups broccoli, steamed and chopped (525 grams)
4 eggs, beaten
2 tablespoons onion soup mix
¼ cup mayonnaise (60 grams)
salt
INSTRUCTIONS
Preheat oven to 350°F or 175°C.
Add broccoli, eggs, onion soup mix, and mayonnaise to a mixing bowl. Mix until well combined. Add salt to taste.
Pour into a round 9-inch round baking pan. Bake for 30 to 45 minutes or until firm and top begins to brown.

I googled a broccoli kugel recipe and this thread actually came up.

2 bags broccoli florets or cuts+florets
1 large onion
3-4 eggs
Matza meal
Spices-salt, pepper, onion, garlic

Saute the onion. Add the frozen broccoli and steam until soft, mixing occasionally
Pour into 9x13
Add matza meal and eggs and spice generously
Mix well, cover, bake @400 for 45 minutes uncover additional 10 min

Can I add a frozen cube sautéed onion and skip powder?

Should be fine. You'll need to taste the mixture before you add the eggs, and season with salt to taste.

How much matzo meal? Does it need to be mezonos?

You could blend...do you mean by food processor? B/c it'll be too hard to cut with a knife unless it's defrosted.

But I think it tastes much better cooked.

I usually try to defrost the broccoli but I would never cook it before making kugel.
