Can I prepare deli roll tonight and cook it tomorrow? Or will it get bad because there’s duck sauce?

Prepare it tonight. Don't egg or glaze it until tomorrow before baking.

I do this all the time.
I prepare it a day or two before n cook fresh.
Stays fine in the fridge overnight.
I sometimes make a batch and freeze.
Just pull out and make sure it's fully defrosted before you bake.
