Gnocchi
2 potatoes
1 cup flour
1 egg
dash of salt
2-3 Tbsps. oil (add to water)
Cook potatoes until soft, and then cool. (If potatoes are hot, dough will be too soft.) Drain and mash potatoes and mix with rest of ingredients. (Add more flour if dough is sticky)
Divide dough in three parts. Roll out each part to a long strip. Cut strips into small bits. Fill a large pot with water, add oil, and bring to a boil.
Drop bits of dough into water and cook until gnocchi float to surface. Remove from water and drain with a sieve.

Tuna fajita
2 cans or pouches (5 oz) Tuna, drained and flaked
1/2 medium red bell pepper, julienned slices
1/2 medium green bell pepper, julienned slices
1/2 medium white onion, julienned half rings
1 tablespoons salad oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon taco seasoning
4 flour tortillas
In skillet, sautee bell pepper and onion in oil until tender. Add tuna, lemon juice, lime juice and taco seasoning. Gently stir mixture over medium heat for 5-10 minutes to heat through. Serve with flour tortillas. Serving suggestion with salsa, guacamole, sour cream if desired. Makes 4.
Either scrambled eggs or falafel with pita and cut up veggies. (Which one it is depends how bedtime round 1 goes).
Leftover potatoes from last night for the baby.
Tuesday- shnitzel, broccoli, sweet potato fries, cabbage salad ( shnitzel and fries were from the freezer)
Wednesday- salmon and baked potato and veggie soup
Thursday- lasagna and veggie soup
