my whole family favorite-
Broiled salmon!!!
Just spice up a bit...I put on lemon juice, some garlic, salt and pepper, and spray with oil....
then I broil on high until it forms a crust around it, and the edges are oozing with juice.
HEAVEN

Drizzle with olive oil. Sprinkle with kosher salt and montreal steak seasoning. Bake uncovered at 400 for about 10 to 12 minutes until done (flakes easily).
Sauce to serve with:
2 tbsp mayo
2 tbsp dijon mustard
2 tsp lemon juice
1 tbsp chopped dill (I use frozen cubes)

It's best fresh but also good cold/room temp as left overs.

I bake it skin up, and pour silan over the whole thing.

additions: I'll often add something lemony - a need of lemon balm leaves, or lemon juice. If it's just for adults, then I'll make it spicy with chili flakes or pepper.

Sweet and Lemony Salmon

This is a high sugar salmon but I make it lechvod Yom Tov .

2 onions circle sliced
2 cups sugar (you can decrease it to 1 and 1/2 Cups if you prefer.
6-7 appetizer size salmon fillet with skin on or off.
Lemon juice
Kosher salt

In a 9x13 disposable pan place sliced onion and sugar and put on the stove top with low to medium heat. The onions should begin to release liquid and the sugar will liquify as well. Allow the onions and sugar to caramalize (onions should turn a nice golden brown or at least clear and the sugar should be syrupy) stir every so often so that it doesn’t burn .
In the meantime sprinkle the salmon liberally with kosher salt.
Once the onions and sugar are caramelized and there is some liquid in the pan, rinse the salt off the salmon and place salmon into the pan . It will be partially submerged in the liquid that’s released from the onions and the liquified sugar. Then pour lemon juice on top until it covers the salmon slices or almost fully covers.
Cover pan with aluminum foil and cook on stove top on low to medium flame for 17 minutes. Allow to cool and refrigerate in the pan it cooked in.

Can you post the sauce?

Smear with a mix of mayo and bbq sauce (or ketchup) and spices, then roll in corn flake crumbs and bake.

Costco sells a McCormick cedar plank salmon spice that is delicious. You just sprinkle on salmon and bake. Always a success.
