"fake" breaded chicken (you don't dip it, you make a mixture of pretzel crumbs, oil, mustard, honey, and a squeeze of ketchup, and you just pour over chicken chunks and stir. Got the recipe from Binah a long time ago, it's YUM)

Baked lemon pepper chicken chunks for those who don't like them with crumbs (like the low carb teenage girls!) (lemon pepper, garlic powder, sea salt, oil, and lemon juice).

salad

baked zucchini slices. (basil, oregano, oil, salt, baked in oven for like 20 min)

Would you be able to post the exact recipe of the fake breaded chicken?

DH has been out of the house since before 5am (and still isn’t back) so I wanted to make something extra hearty for him. Also for me Wink

I am super impressed. And inspired! When my kids were young, I was committed to sitting down ( everyone) every night for dinner. But I always worked full time plus, so sometimes it was just sandwiches. And maybe fresh fruit and vegetables. The main thing is to sit and eat together and share our time.
Btw- I heated up roast beef from Shabbos for myself tonight. My dd made pasta and broccoli for the others.

My planned supper schedule got messed up this week.
Yesterday I didn't have time to make my chicken dinner so I ended up doing tuna patties, ziti & corn, which was on schedule for today.
Today I walked into my house at 7 from Manhattan so had to give what I can serve momentarily.
Ended up serving turkey cold cut sandwiches.
Sauteed chicken cubes. Mini franks & blanks. Mini eggrolls. Shlishkes. Baby corn.

I don't have one. I kind of wing it
(sorry for the pun)

Let's say a cup of pretzel crumbs and half a cup of oil
some garlic powder and some parsley flakes.
A big squeeze of mustard, a big squeeze of honey and a small squeeze of ketchup.

Mix the crumbs till they're oily.

Add to a pan of cut-up chicken cutlets (nuggets)

Mix till the mixture somewhat is adhering to the nuggets.

bake at 350 for like 25-30 min

(I'm not an exact recipe kind of gal, sorry......)
