I think I know what I'm doing for a simcha appetizer, but would love some ideas or hints on what to do.

I wanted to put two cubes of Teriyaki salmon a bamboo skewer on the same plate as the Julienne Zucchini Salad from the Kosher Magazine (cooked slightly on the stove with onion, mushrooms and cherry tomato.)

What size of fish cubes do I need to use to make it not look too chincy (very simple crowd, not fancy)?
How early can I make cooked Julienne Zucchini? Will a day in advance be okay?
Anything else I should put on the plate?
Should the salmon skewer be on top of the zucchini or next to it?

Thanks.

nice idea ... I think I would use 3 pieces instead of 2 on the skewers - in a 1 1/2 to 2 inch size ...

& have you thought of plating with some grilled red pepper for colour or grilled grape tomatoes [maybe]
