My son's favorite lunch is an egg salad sandwich. (With oil, not Mayo, if that makes a difference.) Is that something I can make in advance and freeze? I know hard boiled eggs are yucky when frozen and defrosted - is this any different?

You can freeze anything but this doesn't freeze well.
Definitely don't freeze for longer than a week as the texture will be pretty bad.

No way. You can keep it in the fridge for 2-3 days though.

Oh well, I have 2 32-oz containers.
I'd have to eat a quart daily to finish up.
If it's left over I guess I'll try to freeze just for an experiment.
