I dont eat fish but I make salmon for dh all the time. The type he likes best is
A little lemon juice on top of salmon, put on spices like onion powder garlic powder and mrs dash, spread on some honey bbq sauce, cover with fresh dill. Cook in a covered pan with a little water on the bottom for an hour on 350. Easy and hubby loves it.

I love poached salmon (pretty sure the recipe is posted here so try to search it) It tastes best if made a few days in advance and allowed to sit in the fridge.
another type is you sprinkle some sugar, garlic, pepper, lemon juice, raisins and add some water (an inch or so in the pot) and let simmer for 15-20 minutes. tastes esp good with a dill dip/dressing.

Pecan Crusted Salmon
http://allrecipes.com/recipe/a.....ting/
I skip the butter & parsley, and just spread the mustard and honey on top of the fish instead of mixing it in a bowl first. And I use Panko breadcrumbs.
It's very good, and it's also good cold the next day with a little extra honey on the side.

Marinate the salmon in equal parts of pure maple syrup and soy sauce, then BBQ or broil. Best! Fish! Ever!

I mix equal amounts of teriyaku sauce, brown sugar, and ketchup. I smear it onto the salmon fillet and bake covered for 15 minutes and uncovered for another 10 minutes.
Another way I bake salmon is: I mix mayonnaise, a little ketchup, basil, onion powder, garlic powder, black pepper, salt, and a little aoy sauce. I smear it onto the salmon and bake it covered for 15 minutes and uncovered for 10 minutes.

OP - the recipe is from Dining In, sprinkle fish with garlic and paprika. Combine 2 T oil, 2 T sugar, 2 T mustard and 1 T plus 1 tsp vinegar. Mix well. Set aside half the mixture. Dip the fish into remaining half of mixture and then into corn flake crumbs, until coated. Bake, covered, 350 for 30 min and then an additional 10 min uncovered. Top with reserved mixture and serve!

To me, the secret is in not overcooking it. I buy frozen salmon steaks from Costco and lemon pepper from Trader Joe's. Defrost salmon, spray pans with cooking oil, put steaks cut in half in pan, thickest pieces on the outside. Sprinkle well lemon pepper, preheat oven to 375. Cook for 7 minutes, switch racks, cook for another 5-7. Fish continues cooking outside the oven. Let cool in pans then refrigerate. I always get compliments.

I have two recipes I use on a regular basis
-- Squeeze an orange over the salmon. Bake covered, do not overbake.
-- Mix the following:
4 T oil
2 cloves garlic crushed
2 T soy sauce
2 T sweet chili sauce
1 t sweet paprika
1 t sugar
salt and pepper to taste
Pour over the salmon. Bake uncovered.

Do you find that it makes a difference in the taste if the salmon was fresh or frozen/defrosted?
