Tri-colored vegetable kugel is one such example that doesn't freeze well. Each vegetable layer is cooked, then drained, mashed, eggs and spices added... then baked. The kugel weeps when defrosted and is a soggy mess.
Potato kugel which uses grated raw potatoes freezes well. Stick it in the oven frozen to reheat. You can add a bit of water to the top of the kugel as it reheats to give it that overnight kugel taste.
Other vegetable kugels that use raw grated vegetables also freeze well.

Friday night (just 2 of us) -
Either chicken or zucchini soup (whichever my DH wants, I have them both frozen)
Meatballs
Cole Slaw
Brownies

Shabbos lunch (4 adult guests)
Gefilte fish
Portabella mushroom salad
Roasted onion sweet potatoes
Balsamic marinated zucchini
Chicken cholent with rice
Deli roll
Brownies and lemon bars

I don't know how EMmom makes them, but I take cut up potatoes dressed with either olive oil/salt/paprika etc or in meat juice from a roast, place them in a pan and put them on the grill to roast while I'm BBQ-ing chicken for Shabbat. They come out delicious.

BBQ potatoes is really not that interesting! it's really just the bbq sauce. I slice potatoes mix it with sald, original bbq sauce, and a drop of oil. Then bake for an hour at 350 and then up it to 450 til I get the right crispiness

It's the recipe from here (it's become my default salad recipe because it's so good). The only thing I do differently is to add a squirt of Dijon mustard to the dressing, because I think it adds a nice flavor. Here's the link to the recipe-

mha, your menu sounds delish. too bad my DH hates that kind of food.

we're going out friday night.

our shabbos day guests just cancelled on us (long story, but I'm seriously annoyed with them. it's the 3rd time they've done this.) but I already cooked a ton, so we're trying to scrounge up some yeshiva guys.

challah

cholent
taco salad w/ meat
mushroom bourekas (in phyllo)
asian pasta salad
broccoli kugel

soy ice cream with leftover homemade apple pie filling

If you have the spice and spirit its the one from there, using ready made puff pastry.

basically fry onions and mushrooms till soft in oil or margerine, add a little flour, salt and pepper, and then some water.

I make it in one big roll, but you an also do individual ones.
