Please help me with my salmon

Some how I always mess up my salmon it always comes out way to dry. Can someone give me exact directions on how to get it tasting good. It can be an oven or stove top recipe pref. with a sauce (its for shabbos) My slices are thin- about 1/4 an inch.Please include exact cooking time and directions. Thks!

Sorry, I don't have a recipe, but with slices that thin, the best way to ensure they don't taste like shoe leather is to poach them. I'd make a poaching liquid of water, some soy sauce, a bit of pineapple juice, a few lemon slices, with thinly-sliced onions and garlic infusing their yummy goodness. Bring the water to a gentle simmer and add the fish.

Are you talking about "round" slices of salmon, OR salmon fillets? The poached salmon submitted by Catlady sounds really good. Please let us know how it turns out for you. I usually don't do the round slices because my children complain about the "bones," so I bake fillets of salmon in the oven, coated with a thin layer of mayonnaise and ketchup and sprinkled with a touch of lemon pepper.

the fish is salmon fillet- sold in frozen packages here in Israel. If I poach it- how long do I simmer it for? Also I don't have pineapple juice- can I use some other juice?

sweet and sour salmon
dice one onion, put it into a pot with 1 cup sugar. let sautee on low-medium flame until the sugar melts and the onions are limp.
add 1/2 cup vinegar or lemon juice
add fish slices and water to cover
sprinkle in some cloves and 2-3 bay leaves
bring to boil, then lower flame and let cook for 30-45 minutes. discard cloves and bay leaves and serve cold
enjoy!
(this is good for up to 6 slices)

If it's coming out too dry, then you are probably over cooking it.
Salmon needs to cook for 12-20 minutes.

Saute Spanish onions for a very long time, with salt, sugar, garlic powder and black pepper. Saute till onions are brown. (on a low flame can take well over an hour) For 8 slices, I would use 2-3 lg onions. Taste the onions-you should be able to taste the sugar, salt, garlic and pepper spices. Pour these onions onto the fish slices in a baking pan, and bake for 45-50 minutes on 350.
(sometimes I need to add 2-3 teaspoons of water, so it doesn't burn during baking)

Herring Salmon
Boil up water with a drop of salt in a pan, when boiling, add fish slices. cook for 20 minutes.
While that is cooking, prepare sauce.
Sauce:
Equal amounts of water, lemon juice, sugar, ketchup and mayonnaise. Blend with hand blender. (for 8 slices, 1/2 cup of each should be enough).
Pour off water from the cooked fish, pour sauce over the fish. Add one lg onion, sliced into thin strips, and 10-15 bay leaves.
Better not to leave in aluminum pan, when cooled, transfer to plastic container. Refrigerate.
Best served after 24 hours.

I have lots of recipes for moist salmon. Are you looking for a teriyaki salmon? Breaded? Soy-based? Sweet and sour? Plain with spices?

whatever spices or sauce you decide, bake at 450 for 12-15 minutes. I used to do 350 for 20-25, and it was always dry
