My week's menu didn't work out quite as I had planned...I was really delinquent in the vegetable department, for one thing:
Sunday - Shabbos leftovers
Monday - mushroom barley soup, meatballs in gravy, jasmine rice,
Tuesday - tuna-noodle casserole for me and baby, yogurt and hardboiled egg for one kid, Cheerios and yogurt for the other. Dh had four croissants and a pastry on the way home from work and wasn't interested in supper
Wednesday - lox sandwiches and leftover casserole for kids, steak supper for dh and me
Thursday - schnitzel and mashed potatoes

I can't remember for the life of me what we ate this week. I wonder if my kids remember.
Sunday: leftovers
Monday: meatballs and potatoes in a pot with duck sauce
Tuesday: pita and falafel, macaroni and cheese, salad
Wednesday: hot dogs, rice, frozen veggie mix
Thursday: potatoes with melted cheese

What's your carmelized chicken recipe?
Crunchy Onion Chicken
2 cups French's french fried onions
2 Tbsp flour
1/8 - 1/4 tsp salt
1.5 lbs. chicken breasts, pounded and/or cut for cutlets
1 egg, beaten
Crush crispy onions with flour and salt in a plastic bag.
Dip chicken pieces in egg. Coat in onion crumbs. Press firmly to adhere.
Bake uncovered at 400 for 20 minutes.
(You may need to make more of the onion/flour/salt mixture.)

awesome! this looks like the recipe for the chicken I was just about to buy from the carryout place last week!
The caramelized chicken recipe is from the Binah's "20 Minute Supper Revolution" article (thanks to Imamother for the heads-up on that article!) written by EG Schwartz.
Place cleaned chicken quarters in a 9x13 pan atop sliced onions; add peeled, sliced sweet potatoes. Mix ketchup, garlic powder, apricot jam/brown sugar (should be a thick mixture), pour over pan, cover tightly, bake at 350 for 2 hours.
(I'm not crazy about sweet food but my husband is, so this is in his honor! )

Are you sure you didn't get it? It was the May 10 issue. (I think the Mon before Shavuos? It had a bit of Shavuos material in it...)

Sunday: Garlic roasted chicken, veggies, and potatoes (one pan)
Monday: Meatball and pasta soup
Tuesday: Honey chicken, wild rice, balsamic vinaigrette salad
Wednesday: Chicken pastrami roll ups, sweet potato fries, sweet and savory cole slaw
Thursday: Greek salad, warm crusty bread

im just wondering, but do you feel all ok to give your family a meal of only carbs? or do you make sure there is a mix of carb, protein, and veggie....somehow I feel so not together if I dont serve all 3. like pototatos and cheese sounds delicious, but I would feel so guilty if there was nothing green. just wondering....

I didn't see any menus here without vegetables, except mine. I do usually try to get in vegetables, though. Everyone else here pretty much has vegetables every day in one form or another.

Meat Borekas
• 1 lb. ground beef OR soft meat, tiny dice
• 1 small onion, grated OR 1 small onion chopped and sauteed
• 1-3/4 tsp cumin
• 3/4 tsp salt
• 1 pkg. small or large pastry squares
• 1 beaten egg
• sesame seeds, optional
Preheat oven to 350.
Combine meat, onion, cumin and salt.
Lay out puff pastry squares, fill with meat mixture, fold over to form a triangle and close the ends with tines of a fork or tips of fingers.
Lay out on cookie sheet sized pan. Brush beaten egg over each Boreka. Sprinkle with sesame seeds if desired. Bake uncovered for 30 minutes.

Sun: Grilled steak fillets, rice, ceasar salad
Mon: Bean Burritos, cut up peppers and onions, topped with cheese and salsa
Tue: Mac and cheese with brocoli and salad
Wed: Ordering Pizza, and salad (in laws will be here and want to do something easy)
Thur: Sesame chicken, rice, and grilled vegis
