Clean and lay 1 chicken cut in 1/8's in a 9 x13. sprinkle it with black pepper and garlic powder.
I sauteed an onion red and green pepper, mushrooms and 3 cloves of garlic.
I added to it 1 can tomatoe sauce 1 cup of water 1/2 cup of ketchup & 2 tbsp lemon juice.
poured it over the chicken and baked.
the sauce is delicious over rice!!

Sure!
vegetable un-fried rice" recipe (I got this recipe from greeneyes, it's from MealLeaniYumm)
*1 cup brown rice, cooked
*2-3 cups of any of the following veggies:
bean sprouts, snow peas, chopped celery, red pepper, scallions, mushrooms, broccoli florets.
*1 Tbsp minced garlic
*1 Tbsp ginger
*3 Tbsp soy sauce
*2-3 tsp sesame oil
*salt & pepper to taste
Microwave the vegetables with the garlic and ginger, covered, on high for 5 minutes, until tender crisp. (No oil is needed, only a few drops of water to create steam.)
Combine vegetable with the cooked rice. Add soy sauce, sesame oil, and salt & pepper to taste.
[I made the rice in the oven (1 cup brown rice, 2-1/2 cups water, baked covered tightly at 375 for 1 hour-use immediately) and then added the microwaved veggies and seasonings to it.)
crispy diced potatoes
*3-4 potatoes, diced small
*1 tsp curry powder or paprika
*oil or cooking spray
*salt to taste
Spread diced potatoes on a cookie sheet. Season with oil/spray, curry or paprika, and salt to taste.
Bake uncovered at 400 until crispy on the outside.

Pre=Pesach Dinner Menu: Potluck
What's in the pantry? Pasta? We'll have pasta. Every night if need be. Oh, the pasta is still sealed and can go to the food drive. There's the bulgur I bought for "Middle Eastern Night" six months ago...we have half a bag left. Guess we'll have tabouli salad. Hmmm, half a cup of barley. That can go in the cholent for Shabbat.
Oh, look--rice pilaf mix! Technically it's kitniyot and can be put away, but what the heck, it's a mix, which means it'll be quick to make. Perfect for tomorrow night; I'm working late. Here are some lasagna noodles. Not enough for a whole lasagna. No problema, I'll smash them up and add them to the chicken soup instead of lokshen.
What's this? Wheatena? Oh, right, Gitty wanted to make Wheatena cookies when she was on that health kick last fall. I'll make that for breakfast. It tastes like toasted cardboard, but with some chopped apple, cinnamon and honey I can call it "apple crumble" and tell everyone we're having dessert for breakfast. That'll fool them about as well as Bubby fooled herself eating vanilla yogurt and telling herself she was having ice cream, but it's gotta be done. Those cookies were terrible and anyway I already cleaned the oven for Pesach.
Wheat bran! OMG! Still here after Suri's aborted "extreme deprivation" diet. Thank G-d THAT lasted all of 36 hours. I could sneak it into something like cholent, but we're all regular enough, thanks. I have to repot the houseplants, the roots are already coming through the drainage holes. Guess I can mix the bran in with the soil and consider it compost. Plants need roughage, too, right?
Aha! Look at this: a cup and a half of whole-wheat flour. Juist right for a batch of pancakes. I'll throw in an extra egg and some cottage cheese to boost the protein and some honey and blueberries so the family thinks it's a treat. I'll tell them the dark color is from the cinnamon.
I don't believe it! half a chocolate cake! How long has THAT been there? Well, you know, it's pre-Pesach and it must be liquidated. I hold that consuming chametz is preferable to allowing it to be consumed by the flames. It's a dirty job, but somebody's got to do it. I'll eat it. But strictly leshem mitzvah. I won't enjoy it a bit. Sigh. What a mother doesn't do for her family...

I make whatever I want to get rid of so tonight will be fishsticks, mac n' cheese, omelettes, with some cantaulope for dessert.
Wed: pizza
Thurs: I haven't a clue, let DH figure it out and that goes for the rest of the days until Pesach too. My kitchen is getting switched over to Pesachdik by Thursday and I'm not going to worry about suppers then, my DH will get what he wants (yes I mean take-out).
