I usually get home at the same time as my dh and children, so I make dinners the night before (or couple of days before) and just reheat them. I would like to try making a stir-fry. Is it possible to reheat it without overcooking it? TIA

What type of sauce are you using? A cornstarch based sauce might get a bit thicker, but more liquidy sauces or a drier stir fry should heat up fine.

I basically just used soy sauce, a little vinegar and a little ketchup, with some spices....no corn starch.

Yeah, should be fine
If you need to add a bit of liquid if you see it's becoming dry, you can do so, but leftover stir-fries have been reheated with no ill effects in my home.

Whew thanks.
I wanted to make it into a lo mein type of thing by adding spaghetti but there is definitely not enough liquid there to coat the pasta - should I just add water or more soy sauce - or will that make it too salty?

Adding water and spaghetti will dilute the seasoning. I make a lo mein stir fry all the time and simply use a bit more soy sauce, oil and seasoning.
