I’m thinking that instead of making a huge pot of soup, I can peel all my vegetables and freeze in portions (in bags) and then just dump the bag of veggies into a pot with chicken and spices.
Anyone know if the veggies would cook well with good flavor?

Why would you freeze them? Is it saving you taken somehow?

It’s saving me time if they’re all peeled and ready to cook.

My mother used to do that all the time. It does save a lot of time. You peel everything at once.
It does change the texture of the vegetables(especially carrots) but taste of the soup is the same.
Does your family eat the soup vegetables?
We like to eat the veggies and don't like the taste of frozen ones so I do it for 2 soup before first days and leave in the fridge(and repeat for 2nd days).
You can do it for other type of soup that will be smashed.

It's better to put in the vegetables fresh, it tastes much better. Do what's best for you.

I've frozen zucchini and used it in soup and it came out fine. I usually use a hand blender on the soup so that it all gets pureed at the end.

The vegetables change texture if you freeze them. If you don't mind then go ahead.
