ISO baked crispy chicken for shabbos lunch

Does anyone have a recipe for this? How do you get it to stay moist? I think I once saw something having to do with marinating the chicken in italian dressing, then coating with cornflake crumbs, but not sure what it was or what else there is.

I've had pretty good luck with dipping in italian dressing or mayo and then coating in cornflake crumbs. do NOT overbake it or else it will be dry when you reheat it for lunch. you should also let it cool completely after baking before putting it into the fridge. and when you reheat it keep it uncovered. that should help keep it from getting soggy.

I either dip in honey mustard and then some sort of crumb- panko stays very crisp- or just spray with canola spray and sprinkle with crumbs. Do not overcook and stays nice and moist. And yes, leave uncovered when reheating

You can try the Southern style chicken from Quick & Kosher. It comes out crispy.
Basically coat the chicken in 1 part Dijon mustard and 2 parts mayo. Season. Dip in breadcrumbs. Spray with Pam.

Add oil to your cornflake crumbs (enough to moisten it), also add your own seasoning to plain kellogs cornflake crumbs, comes out great. You can dip the chicken in egg first or ducksauce (makes it sweet and really moist). Bake it like reg. chicken first covered and then uncovered
