I made a ton extra and had in mind that I’d serve on shabbos as well because I thought it keeps well in the fridge. But now I’m thinking maybe that’s too far in advance. Would you serve it?

No. But I tend to be over-cautious with food safety.

Yes. I would.
Anything in there that can get sour?
Are the components separate?

Quinoa lasts at least a week

Unless if it is mixed with veggies like tomatoes

What else is in it?
The quinoa itself is fine
Some veggies won’t last that long

No. Once the quinoa is mixed with vegetables and seasoning, it starts to degrade. 4 days is too much.

I was planning on adding the veggies that degrade faster right before (like cucumbers, fresh tomatoes). Right now what’s in it is red onion, celery, sun dried tomatoes, craisins, fresh garlic + seasoning.

The whole mixture is already degrading. Best to eat it today- latest tomorrow.

Quinoa is good for a few days in the fridge. I would. If you're that hesitant, serving it Friday night is 100% fine.
