You mean a real capon (it's a regular chicken) or those 'K-pons' they sell in the satmar butcher store?
if the latter- they aren't really capons, I think they are boneless chicken bottoms of some sort- you need to stuff them. I've done them with a spinach-mushroom stuffing (it's the recipe for the turkey breast stuffing in the first kosher palette) and a very good rice stuffing (the recipe for apricot almond stuffed chicken in kosher by design- really good.)
I'm hazy on the details, but my cousin once served them with a stuffing that included pastrami and mashed potato. it was deeeelish.
