can anyone suggest an easy, non salty chicken recipe for Erev Yom Kippur?

There's no such thing as unsalty kosher poultry, but why can't you just sprinkle with your choice of herbs and bake it in the oven (brush with oil or not as you see fit) or sprinkle with salt-free Italian seasoning and cook on stovetop in no-salt-added tomato sauce, with or without strips of bell pepper?
