What do you do with it? Can't stick it straight in the fridge. Don't want to wait up hours for it to cool off. Is it OK to let it cool on the counter until 6am?

No def don’t leave it out till 6 am
That can be spoiled
Just cook it off 20-30’min and put in fridge

As long as the hot food is not placed next to milk or raw meat that can spoil quickly, it's fine ro refrigerate it.

I'll set an alarm for 2-3 hours depending on the size and clear a space in the fridge before going to sleep. All I have to do is stumble out of bed and put the pan in the fridge.
Don't know if it's necessary for food safety but this makes me feel calmest.

Just move them to separate parts of the fridge. I also suggest you take the roast and wrap it in foil. Save the liquid in a separate container. Cools off much faster. Takes up less space.

I put it right in the fridge at least half the time. Never caused a problem in either the food or the fridge. Been married BH 27 years. Enjoy the roast!
